Hello all, no particular topic here. I have been using Big Oven software for several months but just recently started hanging out on the site, in fact I have it up as my startup page :). I love reading all of your recipes and words of wisdom, and hope to learn tons. You are a great crowd and I look forward to making many great recipes. I haven't posted any myself yet, but hope to very soon!

Dried Chestnuts...

New to this site. Not quite sure how it works.

A bit about me, I am a pretty good home cook with some professional experience and training.

The question is use of dried chestnuts. DH brought me a bag of them. I boiled some in salted water drained and used in stuffing a chix. last night. Pretty good. Any ideas on how they should be used? This is a new ingredient to me.

Hey allI have a great mushroom soup recipe that I need to cook so I can get all the ingredients and instructions down so I can write it up. This is a "stick to your ribs" style that is great on a cold wintry day. So the next time I make it, which will probably be in the near futureI will do that and share it with you. To get you going, start looking for lobster mushrooms and morels, they really bring the dish alive.

Thanksgiving dishes

I will be making my favorite soup which is cream of mushroom, leek and potato. Everyone who has ever tried it has asked for the recipe, even those who don't like mushrooms fall in love with this one. I learned the recipe from a chef on a dinner train. I will post the recipe in a day or so.
