I was wondering if anyone could tell me a way to fry sping rolls or egg rolls without having a deep fryer. I vaguely remember my mother doing this when I was a child but I can't remember how or if I'm even mistaken. I want to cook some for my girlfriend but I don't have a deep fryer and am a little strapped for cash right now.
You dont need a deep fryer, i use a small sauce pan and do 2 at a time, the oil only has to be 3-4 inches deep. Be sure to save your oil because it will be flavored and you can use it over and over again. Keep it stored in cupboard.
You know your oil is ready by dropping a piece of the wrapper in and it sizzles. Use tongs to hold them down and roll them around, then drain on paper towel
you can also try placing a small amout of oil in a saute pan and cover it after placing the rolls inside. the oil will splatter and hit the inside of the lid and drip over the top of the rolls. you will have to turn the rolls at least once to achive a uniform color. it's a slower process than deep frying but you do achive that deep fried crispness and with less fat.
