We love mexican food and try very hard to make it as healthy as possible. Any suggestions?
Here's a recipe I quite like, and can be beefed up a bit in healthiness by using whole wheat tortillas and lower-fat cheese, with a lime-yogurt-cilantro sour cream:

Boy that's a tough one. Besides substituting low-fat cheese and sour cream, the best change you can make is portion size. Always try to make things like fajitas that include lots of veggies and use corn tortillas instead of flour. Any of your favorite recipes can be low-cal as long as you watch your portion sizes!
And I believe that if you want to lose weight, you cut carbs, increase fats and stay with moderate protein, but no one wants to hear that, since it cuts out just about everything Americans are addicted to.
