i want to try to make a fresh fruit tart. i plan to make a filling, maybe a simple cheesecake in tart pan. i know i bake that. but i want to NOT bake the fresh fruit. rather, use a simple syrup with maybe even some grand marnier mixed into a variety of fruits i.e. mango, grapes, peaches, raspberries and blueberries. then pouring that over the cooled cheesecake tart. i am open to any and all suggestions on this. it's for my husband's birthday party (july 4) and it just sounds good, cool and refreshing, to me. any help is appreciated.
I know this might not be quite what you're after (because it's got a cheesecake base, and is baked), but I had to mention that the Blackberry Fruit Tart is terrific, and works particularly well on the 4th of July (nice, deep blue color and white... just needs some red accents).
Paula Deen has a great recipe for a fresh fruit tart, similar to one I like to make. Very quick, easy and virtually no cooking necessary except for the tart shell.
Make adjustments by using the fruits you like, and if you don't like the citrus, try using a simple glaze of apricot jam, cooked down with a little water, or juice, or a little grand marnier. I also do a similar version with individual shells. Enjoy!

I found that a nice pastry cream is the perfect compliment for a fresh fruit tart that you don't want to bake after adding the fruit.
