Savory colorful vegetable that keeps well in the refrigerator
Chop red cabbage and put in a large pot. Drizzle with oil until mixing makes the cabbage shiny. Sauté on medium heat about ten minutes. Chop apples and add to pot with a small amount of water. Add vinegar, sugar and salt to taste. I start with about1/4-1/2 cup vinegar and sugar. Cook for several hours on medium low heat, stirring occasionally. Good when it sits in the refrigerator for a day or two. Serve hot.
