3 poblano peppers; seeded and chopped
2 red bell peppers; seeded and chopped
1 green bell pepper; seeded and chopped
1 1/2 bunch green onions; sliced
2 packages (1 lb) frozen corn; thawed, divided
3 eggs
2 tablespoons maple syrup
2 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 pound prepared cornbread; coarsley crumbled
