My husband is not a fan of cooked Kale, but apparently raw kale is a hit! And super easy! I totally cheated with premade dressing, but the fresh lemon and Parmesan take it up a notch. Kale doesn't wilt like lettuce, so this is good to make ahead for parties! You can also add a protein and serve with bread to make this a balanced dinner :)
1. Place kale in bowl, add lemon juice and oil and let sit for 3-4 minutes to soften the leaves.
2. Add desired amount of Cesar dressing, shaved Parmesan, and croutons.
Do not substitute bottled lemon juice or powdered grated Parmesan cheese, as it will just not come out the same.
