Delicious and easy salad

Ingredients

1 tablespoon Shallot; minced
2 tablespoon Olive oil
2 teaspoon White wine vinegar
1/4 teaspoon Salt
1/4 teaspoon Dijon mustard
1/8 teaspoon Black pepper
6 cups Arugula
2 pears; thinly sliced
1/4 cup Walnuts; toasted

Original recipe makes 4 Servings

Preparation

1. Toast the walnuts in 400 degree oven for 5 min. Cool.

2. Combine first 6 ingredients in a large bowl; stir with a whisk.

3. Add arugula and pears to bowl; toss to coat.

4. Place about 1 1/2 cups salad on each of 4 plates; sprinkle each serving with 1 tablespoon walnuts.

I candied the walnuts w/a little maple syrup, I used a spinach-arugula blend and added some crumbled goat cheese. I also swapped white balsamic for the wine vinegar to add some sweetness. The salad turned out excellent. Will definitely make again!
