Chicken, bean and cheese filled peppers in a freshly prepared tomato sauce.
Preheat oven to 400(F) degrees.
Prepare sauce:
In food processor or with stick blender in a large bowl large bowl - purée tomatoes with their juices.
In sauce pot over medium heat, sauté onions and garlic and jalepenos until aromatic and onions translucent. Be careful not to burn garlic. Add 1/4 cup corn flour to vegetables and stir to make a paste.
Add tomato purée and simmer for 5 minutes. Stir frequently and reduce heat to med-low. Sauce will begin to thicken slightly. Turn off heat and allow sauce to rest.
While sauce is resting, in a large bowl (can use same bowl you puréed tomatoes in!) combine chicken, black beans, remaining 1/4 cup corn flour and 1 cup of the cheese of you choice. Season lightly with salt and pepper. Set aside.
Cut poblano peppers lengthwise in half so they lie flat.
Spray 8x13 baking dish with a light coat of oil.
Add 1 cup of your finished sauce to chicken mixture, then place remaining sauce in baking dish.
Fill poblano pepper halves with chicken mixture, then place filling side up in the sauce. Sprinkle with remaining cheese. Cover baking dish with foil.
Bake 45 minutes, then remove foil and bake until cheese is a nice color and bubbly - about 10-15 minutes.
Don't worry if your sauce seems thin, it will Thicken during baking!
