Dried Chestnuts...http://www.bigoven.com/groups.aspxNew to this site. Not quite sure how it works.

A bit about me, I am a pretty good home cook with some professional experience and training.

The question is use of dried chestnuts. DH brought me a bag of them. I boiled some in salted water drained and used in stuffing a chix. last night. Pretty good. Any ideas on how they should be used? This is a new ingredient to me.

Thanks

Pastry Cake Info Wantedhttp://www.bigoven.com/groups.aspxMy Uncle used to buy a beautiful cake that had layers of thin pastry between the cake layers. It was filled with cream and fruit usually.  This was over 40 years ago and everyone I've asked doesn't know what I'm talking about.  Can you tell me the name or anything about these cakes?

Good mandolin slicer?http://www.bigoven.com/groups.aspxcooking commentsTwice Baked Potato Questionhttp://www.bigoven.com/groups.aspxI want to make this recipe for a work pitchin but hoped that I could do all the prep the night before, refrigerate and then pop in the oven to bake when I wake up.

Does anyone know if it will come out tasting as well?

I posted a question on the recipe itself but could anyone tell me if you can do all the prep work to a twice baked potato casserole but not bake it until the next day and still have it taste good? Any help is appreciated!
