Ingredients

3 lowfat honey graham crackers

12 oz fat free cream cheese softened (1 1/2 8 oz packages)

1 cup + 2 tablespoons sugar

1/2 cup all purpose flour

2 containers fat free yogurt (8 oz each) (I like Weight Watcher

4 egg whites

blackberries optional


Directions

Preheat oven to 350, line Springform pan with parchment Finely crush graham crackers and add 2 tablespoons of sugar Mix and sprinkle evenly on bottom of Springform pan Beat cream cheese and remaining sugar and flour until smooth Add yogurt and egg whites, mix until smooth SLOWLY pour batter into prepared pan Bake 50 minutes or until center is almost set Loosen cake rim from pan immediately after removing from oven Cool completely, refridgerate 3 hours or overnight Top with blackberries if desired

I used plain fat free greek yougurt and added 1/2 teaspoon of vanilla extract and 1/4 teaspoon of almond extract. I also used eggbeaters instead of egg whites. It was so good no one would have guessed it was fat free. Delicious!

If you want a Chocolate Cheesecake, add sugar free, cook and serve chocolate pudding mix to the batter. I then top it with Sugar Free Cherry pie filling and Fat Free Cool Whip for a kinda Black Forest Cheesecake...Not sure how many points that adds, probably not much more. The yogurt I use for the plain cheesecake is the Weight Watchers Amaretto Cheesecake flavor. [I posted this recipe.]
