5 Cheese Mac and Cheese

Ingredients

16 ounce Elbow Macaroni Noodles

1 pound Bacon chopped

1 medium Onion diced

5 tablespoon Butter

6 tablespoon Flour

1 tablespoon Dijon mustard

2 cups Milk

2 cups Heavy cream

1 sprig Thyme

1 Bay leaf

1/2 teaspoon Salt

1 1/2 cups Fontina Cheese grated

1/2 cup Blue Cheese

3/4 cup Gruyere grated

3/4 cup White Cheddar Cheese grated

3/4 cup Parmesan grated

3 tablespoon Italian Parsley chopped

1/2 cup Panko Bread Crumbs


Directions

Preheat oven to 450 Cook noodles aldente. Drain In a heavy pot cook bacon. Remove, reserve some drippings and cook onion until soft. Add butter and flour and mix roux. Whisk in mustard. Add milk and cream, whisking until thick. Add Bay and Thyme - cook for 15 minutes Add 1 cup Fontina, all blue, 1/2 cup each Gruyers-Cheddar-Parm stir until melted. Add cooked noodles and put into a 9X13 pan. Compine cheese and Panko and sprinkle on top. Bake for 15/20 minutes. Rest 5 minutes before service.
