Absolute Mexican Cornbread

Maybe this should be called corn cake. Its moist and flavor packed.

Ingredients

1 cup Butter

1 cup Sugar

4 large Eggs

1 15-oz can Creamed corn

2 ounce Green chilli peppers drained

1/2 cup Monterey jack cheese shredded

1 cup All purpose flour

1 cup Yellow corn meal

4 teaspoon Baking Powder

1/4 teaspoon Salt

1/2 cup Cheddar shredded


Directions

1. preheat oven to 300 degrees F. Lightly grease a 9x13 inch baking dish. 2. Beat together butter and sugar. Beat in egss one at a time. Blend in cream corn, chiles, Monterey Jack and Cheddar cheese. 3. In a separate bowl, stir toether flour, cornmeal, baking powder, and salt. Add flour mixture to corn mixture; stir until smooth. Pour batter into prepared pan. 4. Bake in preheated oven for 1 hour, until a toothpick inserted into the center of the pan comes out clean.

Moist, cheesy...I served it with chili for an easy Christmas Day meal!

Awesome cornbread. I added a can of rotel and doubled the cheese. Very thick moist cornbread.
