Andy Mac's Low-Calorie Twice-Baked Potatos

Ingredients

4 medium Potatoes, Russet

4 oz Bacon Bits

1 1/2 cups Broccoli Florets

1 cup Water

1 cup Fat-Free Cheddar Cheese Shredded and Divided

1/2 cup Low-Fat Sour Cream

1/2 tsp Salt

1/2 tsp Pepper

3 Scallions Finely Chopped


Directions

1. Pierce potatos with fork and cook on Medium in microwave for 20 minutes, turning once or twice. 2. Steam broccoli in 1 cup of water per package instructions and mix with bacon bits. 3. Cut off top third of each potato and scoop the insides out into a large bowl. 4. Place the potato shells in a small baking dish. 5. Add 1/2 cup of cheddar, sour cream, salt and pepper to the potato insides and mash with a potato masher. 6. Add scallions and the broccoli/bacon mixture and combine. 7. Evenly divide the potato mixture amongst the four potato shells and top with the remaining 1/2 cup of cheddar. 8. Microwave until the filling is hot and the cheese is melted about 3-4 minutes.
