Antipasto Chicken

Ingredients

4 boneless chicken breasts

1/2 teaspoon Garlic powder

1/2 teaspoon Black pepper

6 ounces Marinated artichoke hearts

1 small Red bell pepper

2 medium Tomatoes

2 1/4 ounces Ripe olives drained and chopped

1 tablespoon Basil fresh chopped


Directions

1. Coat a 12 inch skillet in cooking spray and place over medium heat. Sprinkle the chicken breasts with the garlic-pepper blend and place in skillet. 2. Cook for about 3 – 5 minutes, flip, and cook another 3 – 5 minutes, until brown. 3. In a medium sized mixing bowl, mix together the remaining ingredients (depending on the artichoke hearts you get, they may need to be cut in half). Spoon the mixture over the chicken and continue to sauté, about 10 minutes longer or until the chicken is cooked through.
