Apple-Cinnamon Pancakes (2 Pts)

Ingredients

1 1/4 cups all-purpose flour

2 Tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup low-fat buttermilk

1/2 cup cinnamon applesauce

1 Tablespoon vegetable oil

1 teaspoon vanilla extract

1 large egg lightly beaten

1/2 cup Braeburn apples diced

Directions

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients in a large bowl; stir with a whisk. Combine buttermilk and next 4 ingredients in small bowl; stir with a whisk until smooth. Add buttermilk mixture to flour mixture; stir until smooth. Stir in apple. Spoon about 1/4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn [pancakes when tops are covered with bubbles and edges look cooked.
