1/4 cup coconut oil solid at room temperature (should be the same consistency as softened butter)

1/3 cup coconut sugar

1 egg yolk room temperature

1 teaspoon vanilla extract

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon grated nutmeg

1 cup (96g or 4 oz.) blanched almond flour

1 apple peeled and diced

1/3 cup pecans toasted and roughly chopped

1 tablespoon coconut oil

2 tablespoons coconut sugar

1/4 teaspoon cinnamon

1 apple peeled and diced

Delicious! My kids loved it. I have a daughter who doesn’t like fruit so she didn’t care for the chunks of apple. I’ll run them through the food processor next time. I also had to add another five minutes to the cooking time. We made it for breakfast and it was a little on the sweet side, so we will probably cut on the sugar next time. It was so good. And it made the house smell divine. Quick to make.
