Apple Pound Cake

Ingredients

3 cups All purpose flour

3 cups Apples - Red Delicious peeled & cubed

2 cups Coconut

3 Eggs

2 cups Sugar

1 1/2 cups Pecans chopped

1 1/2 tsp Baking soda

2 tsp Cinnamon

1 tbsp Vanilla

1 cup Light brown sugar

1 stick Butter not margarine

1/4 cup Evaporated milk


Directions

Cream sugar, eggs and oil. Add dry ingredients and stir until well-blended. Fold in apples, coconut and pecans. Bake at 350 for 1 1/4 - 1 1/2 hours. Test for doneness, Top of cake will become brown and crusty. Best to use a tube pan for baking. Icing Mix ingredients and cook until bubbly stirring constantly, Once cake has cooled, drip icing slowly on cake until it's absorbed into the cake.
