Ingredients

2 Eggs

1 ts Cinnamon

2 c Flour

1 ts Salt

1 ts Baking soda

2 c Applesauce (1 reg size can)

1 c Vegetable oil

2 ts Vanilla

1 ts Nutmeg

2 c Sugar

1 c Raisin (optional)


Directions

From: pippa@parcplace.com (Pippa Dillman) Date: 5 Aug 1994 16:34:07 -0400 Grease & flour 2 loaf pans. Sift together dry ingredients, except sugar. Set aside. Mix sugar, oil eggs, vanilla & applesauce. Blend together dry & wet ingredients. Pour in pans. Bake at 350 for 40 min. Check with toothpick. Note: makes small loaves & doesnt rise very much. My kids loved this! I made this twice, first as bread then as muffins. I think it worked better as muffins. The bread was too moist and fell apart. I reduced the sugar to a cup and a half. I also only cooked the muffins for 30 min.
