Apricot Baklava

Directions

Simmer apricots in water and orange juice. When tender, remove from heat and cool slightly before chopping into small pieces. Combine apricots with walnuts, sugar, cinnamon, and cloves. Brush a large baking pan with butter. Lay 8 sheets of fillo (always brush butter between each sheet). Spread 1/3 of the nut mix evenly on top. Lay another 8 sheets of fillo, and repeat process until all nut mixture is used. Lay a final layer of 15 sheets fillo on top. Score top layer fillo into 1.5" diamonds or squares. Brush with remaining butter. Bake in preheated 350°F oven for 45 minutes to 1 hour, or until golden brown. Cool slightly. Place all ingredients for syrup in a small sauce pot, bring to boil, and simmer for 10 minutes. Allow to cool slightly, and pour warm syrup evenly over baklava. Cool completely, cut, and serve.
