Arugula, Watermelon and Feta Salad

Mays seem like an odd combo with onions, vinegar and watermelon- but it really works! The dressing by itself does NOT taste good, but don't worry as it does with the sweetness of the watermelon. Resist the urge to add sugar to the dressing.

Ingredients

4 oz feta cheese- crumbled

2 lb watermelon- cubed

8 oz grape tomatoes- halved

6 tablespoons olive oil

4 teaspoons white balsamic vinegar

1 teaspoon kosher salt

1 package arugula greens

1 cup onions- Vidalia or if not available red onion


Directions

Crumble feta, cut watermelon into bite-sized pieces and halve the grape tomatoes. Whisk oil, vinegar, and salt to blend; set aside. Place arugula, onions, tomatoes, watermelon and feta to the bowl. Drizzle the dressing and toss lightly. For quick use in future meals, mix in a bowl just prior to serving.

Love Arugula! I happen to have a salad like this at a local restaurant and wanted to find a similar recipe and found this, very happy. Made and is very refreshing, especially in the hot summer months.

Dislike Arugala, so subbed baby spinach leaves. Also think th recipe is better without the tomato
