Autumn Pork Chops

Ingredients

1.5 pound Bone In, Center Cut Pork Chops (1/2 to 3/4 inch thick)

2 medium Apples cored and thinly sliced - cooking variety

1 large Onion sweet, very thinly sliced

2 tablespoons Extra Virgin Olive Oil

2 tablespoons Butter

1 tablespoon Lemon juice


Directions

In large nonstick skillet over medium heat add Olive oil and 1 T butter, brown chops on both side, seasoning with salt and pepper and a bit of spice/herb mix from below. Remove chops from pan. Add remaining butter melt then add onions stir cooking for 2 minutes. Add apples and lemon juice and cook for 2 minutes mixing well with onions. Create 'wells' and return pork chops to pan cover and cook until chops are done and apples are tender but not mushy. Serve pork chops with apples and onions on top. spice/herb mix: I crushed using my mortar & pestle approximately 1 Tbsp dried Thyme, 1 1/2-2 Tbsp dried Rosemary and 1/4-1/2 tsp poultry seasoning. Note: This will make more than you need for this recipe, but is good with other things.

Good and simple

I have a very picky 7 year old. She asked for 2nds and she never does that. Added cinnamon to apples. I didn't have any rosemary or thyme so I used garlic, salt & pepper & paprika..very tasty. Will definitely cook regularly.

I added some nutmeg and cinnamon to the apples. I also added some apple juice to deglase the pan before adding pork chops back to the pan. They were very good

Make sure and butterfly the pork chops. Very nice flavoring.
