Bacon and Cheese Stuffed Chicken

Ingredients

14 ounce Boneless skinless chicken breast halved and pounded flat

4 slices Bacon cooked crumbled

1 1/2 ounce Sharp cheddar cheese cut into pieces

1 teaspoon Corn starch

2/3 cup Chicken broth

2 tablespoon Parsley chopped

1 dash Salt & pepper

1/4 teaspoon Paprika


Directions

- Cook bacon in large skillet till crisp, remove bacon and crumble. - Place bacon and cheese on one half of the breast. - Place the other half of chicken breast over on top of the bacon and cheese. - Sprinkle chicken with salt, pepper and paprika. - Heat bacon grease to med-high heat. - Add chicken and cook 5 mins per side. - Reduce heat to med-low. - Cover and cook for 10 mins or until done. - Remove chicken and keep warm. - Stir cornstarch into chicken broth. - Add to skillet and bring to boil, stirring. - Cook 3 mins until thickened. - Add parsley. - To serve spoon over chicken.

I really enjoyed this i didnt make the gravy i just poured sweet chilli sauce over it instead. I like its cooked differently as in the oven it gets dry.

Good recipe. Very easy to make. The gravy was the hardest part for me. I used chicken thighs instead of breast and I cooked them as instructed in the bacon grease, afterwards I layer the bacon on top of the chicken thighs and sprinkled mozzarella and cheddar cheese on top of the chicken and bacon pit it in the oven for 25mins and served and it was still tasty. I did not lay the thighs on top of one another. I will be making this much more often. Thanks for this recipe.
