1 lb bacon cut into 1-inch pieces

1 medium onion chopped (1/2 cup)

1 medium red bell pepper chopped (3/4 cup)

1 package (8 oz) sliced fresh mushrooms

2 tablespoons Dijon mustard

1/2 teaspoon salt

1/2 teaspoon pepper

3/4 cup milk

12 eggs

1 package (2 lb) frozen hash browns thawed

2 cups shredded Cheddar cheese (8 oz)

Excellent. I added 1 lb of cooked mild pork sausage on top of first layer of hash browns. Used half and half instead of milk.
