Ingredients

~10# Pork Belly

12 c cool water

1 c kosher salt

1 c brown sugar

4 t curing salt

4 Bay leaves

2 t peppercorns


Directions

1. Mix brine 2. Cure for ~7 days, turning daily 3. Smoke at ~180° until internal temp is 150° 4. Cool completely 5. Slice COLD
