Baked Cake Donuts

Ingredients

2 1/2 cups all-purpose flour

2 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon ground cinamon

1/4 teaspoon ground nutmeg

2 eggs room temperature

3/4 cup whole milk room temperature

2/3 cup light brown sugar packed

1/4 cup unsalted butter melted

2 teaspoon pure vanilla extract

GLAZE

1 1/2 cup powder sugar

1/4 cup Milk

1 teaspoon vanilla extract

food coloring optional


Directions

For the donuts: 1. Preheat oven to 350°F (177°C). Spray the donut pans with non-stick spray. Set aside. 2. Whisk the flour, baking powder, salt, cinnamon, and nutmeg together in a medium bowl. 3. In a separate bowl, whisk the eggs, brown sugar, and milk together until smooth. Add the melted butter and vanilla, whisking until fully combined. 4. Pour the wet ingredients into the dry ingredients and mix with a rubber spatula until just combined, taking care not to overmix. The batter will be thick. 5. Spoon or pipe the batter into the donut pans, filling about ¾ full. Do not overfill. 6. Bake for 8-10 minutes. The donuts will be light on top and lightly golden on the edges. When you press into the donut with a finger, the donut will bounce back into shape. Transfer to a wire rack to cool completely before topping with glaze. For the glaze: 1. Whisk together the powdered sugar, milk, and vanilla in a small bowl until completely smooth. Add milk one tablespoon at a time until the desired consistency is reached. Mix in food coloring if desired. 2. When the donuts have cooled to the touch, dip into the glaze, letting the excess drip off. Place on a wire rack, add sprinkles if desired, and allow to dry for at least 30 minutes before serving.

HUGE donut fan here.... And these were exactly what I was expecting. Don't get me wrong, fried donuts are the king of the castle, but these are light, flavorful, and delicious. I've made them a ton and are now a staple of my dessert menu.
