Baked Herb Crusted Chicken

Ingredients

3/4 cup Low fat buttermilk

1 tablespoon Instant chicken bouillon granules

6 skinless chicken breasts

1 1/2 cups Herbed seasoned stuffing mix Crushed

1/4 cup Parmesan cheese Grated

2 tablespoons Chopped parsley

1 teaspoon Grated lemon rind

1/4 teaspoon Black pepper

1 tablespoon Butter Melted


Directions

In 1 cup measure combine buttermilk and bouillon. Let stand 10 minutes. Place chicken in shallow dish. Stir buttermilk mixture and pour over chicken. Let stand 30 minutes. In plastic bag combine stuffing mix,cheese, parsley, lemon rind and pepper. Add chicken a few pieces at a time. Shake to coat. Place in lightly greased shallow baking dish. Drizzle with butter. Bake at 350 degrees for one hour until golden and crisp.
