Baked- Pork- Sweet and Sour Pork Chops

Ingredients

1 20 oz can Pineapple chunks drained- reserve liquid

1 1/4 cups Ketchup

1 Tbls brown sugar firmly packed

1 Tbls Cider Vinegar

3 Carrots sliced- 1/4" rounds

1/2 green bell pepper cut in chunks

2 Tbls Vegetable oil

4-6 pork loin chops 1 in thick


Directions

Oven to 350. Lg saucepan, combine reserved pineapple juice, ketchup, brown sugar, and vinegar; cook 5 min till hot. Add pineapple chunks, carrots, green pepper; remove from heat. Lg skillet, heat oil; brown chops. Baking dish, add chops; spread pineapple-veggie mixture over the top. Cover w/ foil; bake 25-35 min, till chops are done and veggies crisp tender.
