Balsalmic Bacon Asparagus with Onions

Not a health food for sure. Family and firehouse favorite. Cheap and easy also. Very easy to double for more people.

Ingredients

1 bunch Asparagus thinner is better

1 lb Bacon Peppered think cut is best

1 large White onion

1/2 cup Balsalmic Vinegar


Directions

Cut the bacon into 1/2-1 inch squares. Fry the bacon in a pan until the meat starts to darken and stiffen up. Slice the onion and add to the bacon once the bacon has stated to change color. Fry until the onions are brown. Drain the fat from the pan and add the balsalmic. While that is heating cut the ends off the asparagus. Place the asparagus on the top the the bacon and onions but do not mix together. Cover and steam for approx 5 min. Then mix together and serve.

Absolutely delicious!!! I think you could cut back on the bacon-maybe 1/2, but bacon makes everything better, so why not go for it? We had this with simple pan-seared filets and it was one of the best meals we've ever made. Thank you for sharing!!

Try not to overcook the asparagus. Add the onion before the bacon is cooked all the way otherwise by the time the whole dish is done the bacon will be way overcooked. [I posted this recipe.]
