Balsamic Tuna

Ingredients

1 1/2 lbs Tuna or Mahi Mahi, 4 Steaks 1" thick

2 tablespoon Olive Oil

1/2 pound Onion diced

2 cloves Garlic

3 ea Plum tomatoes diced

5 tablespoon Orange Marmalade

5 tablespoon Balsamic Vinegar


Directions

Preheat Oven to 450 F. Coat baking dish with 1 tablespoon of Olive Oil. Place Steaks in dish. Bake 10-12 minutes until fish flakes easily with a fork. Meanwhile, heat 1 tablespoon of oil in skillet over medium-high heat. Add onion and sautee for about 2 minutes, until tender. Add tomatoes and garlic, stir in marmalade and vinegar. Thicken the sauce as required with starch/water. Serve salsa over tuna on top of rice.
