Banana-Fig Bread

Ingredients

3 large Bananas ripe,mashed

1 1/2 cups Figs, dried stemmed & diced

1/4 cup Applesauce

1/3 cup low fat plain yogurt

2 large Eggs

2 teaspoon Vanilla

1 cup Walnuts chopped

1 1/3 cups All purpose flour

2/3 cups whole wheat flour

1/2 cup Sugar

1/2 cup Brown sugar

1 teaspoon Baking soda

1/2 teaspoon Salt


Directions

Preheat oven to 350*; spray and flour bread pan. In mixer, combine bananas through vanilla until well blended. Gradually add remaining ingredients except walnuts and mix until all incorporated. Turn off mixer and stir in walnuts. Spoon into prepared dish and bake for 55 minutes or until cake tester comes out clean. Cool in pan on wire rack for 30 minutes. Remove from pan and cool completely. (can freeze up to 6 months).
