Banana Nut Cake

Ingredients

3/4 cup Shortening

1 1/2 cups Sugar

3/4 cup Banana Ripe and Mashed

1/2 teaspoon Salt

2/3 cup Buttermilk

1/2 cup Nuts Chopped

1 teaspoon Vanilla

1 3/4 cups Flour

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1/2 cup Brown Sugar

2 tablespoons Flour

1/2 cup Evaporated milk

2 tablespoons Butter

1/3 cup Nuts Chopped

1/2 teaspoons Vanilla

Dash Salt

1 Egg

1/2 cup Shortening

1/4 cup Butter Softened

1 teaspoon Vanilla

2 cups Powdered Sugar


Directions

Beat shortening and sugar at high speed until fluffy. Add eggs and beat 2 minutes at medium speed. Add banabas and vanilla, beat 2 minutes longer. In another bowl, stir together flour, baking powder, soda, and salt. Add to creamed mixture alternately with buttermilk. Stir in nuts. Pour into 2 - 9 inch pans. Bake @ 375 for 25 minutes. Cool in pans for 10 minutes before removing. Filling: Cook first four ingredients together until mixture is thick and bubbly. remove from heat and stir in remaining ingredients. Chill one or two hours. Spread between cake layers. Frosting: Beat together egg, shortening, butter and vanilla at medium speed. Gradually add powdered sugar. Beat until light and fluffy.
