Bao Bun with meat filings

Ingredients

A Dough

250 gr (2 cups) AP flour 4 or 5 tsps (1 and a half tbsp) taken out, replaced with corn starch.

3-4 gr instant yeast

145 or more ml milk

30 ml vegetable oil

B Fillings

2 dried ear mushrooms soaked

6 dried shitake mushrooms soaked

1 sweet sausage (50 gr)

30 gr onion

1 shallot

150 gr minced pork

Oyster sauce to taste

Quail eggs

Glass noodle

C Dough

1 egg white (30 gr)

73 gr AP flour 1 tbp replaced with cornstarch

30 gr caster sugar

10 gr milk powder

4 gr baking powder


Directions

1. Make a well out of A flour & yeast, pour in milk & oil, mix till incorporated. Knead very lightly. Cover with wrap and let sit for about 20 mins. 2. Soak mushrooms, glass noodle, slice ingredients, make the filings. 3. Sprinkle flour on clean surface. Knead the dough for about 5-7 mins. Let rise for ~1 hr. 4. Boil and peel eggs, set aside. 5. After the dough has doubled in size, knead very lightly, add in B (egg white, sieved mixed flour, sugar, baking powder, milk powder). Knead for ~10 mins. 6. Divide into 8 parts, make the buns. Let sit for 15 mins before steaming. 7. Steam for about 15 mins max.
