My Mother's Basic Beef Barley Soup...

Ingredients

1 medium Beef Soup Bone

1 1/2 cups Barley

2 large Onions (Diced)

2 cups Turnips (Diced)

2 cups Potatoes (Diced)

2 cups Carrot (Diced)


Directions

#1) Cook Soup Bone in 1 Quart of Water for 2 1/2 Hours... #2) Meanwhile Soak Barley in 2 Cups of Water while the above is cooking & Prepare Veggies... #3) After 2:1/2 Hours Cooking, Set aside & Save the Beef Stock. Cut & Cube the Meat from the Soup Bone... #4) Put Meat back into the Beef Stock & Add the Drained Barley... #5) Cook for another :30 Minutes... #6) Add the Veggies & Cook for another 2 1/2 Hours... #7) Serve with Soda Cracker or Fresh Dinner Rolls...
