Beef Stroganof

Tender Beef Tips in a Creamy, Beef Gravy reduction served with Egg Noodles.

Ingredients

2 Lbs Beef, New York Strip Steak or Tri-Tip Roast Cut across the grain into 1 inch chunks

1/2 Whole Yellow Onion Diced

1 Lb Brown Cremini Mushrooms Halved and Sliced

2 Tablespoons Butter (Optional)

1/2 Cup Flour

1 Cup White Wine Pinot Grigio or other

1 Can or 2 Cups Beef Broth

1 Whole Bay Leaf

5 Sprigs Fresh Thyme

1 Tablespoon Brown Sugar

1/2 Cup Sour Cream

1/2 Lb Egg Noddles

Kosher Salt

Black Pepper


Directions

1. Brown Beef Chunks in Batches making sure to salt and pepper heavily in this step for flavor retention. Brown Mushrooms & Onions with Beef until softened. Add Butter & after it is melted in sprinkle the Flour into the mixture to coat the meat. When meat juices are absorbed Pour in Wine to deglaze the pan and scrap up any stuck on bits in the bottom of your pan. Add Beef Broth, Bay Leaf, Thyme, & Brown Sugar. Allow to simmer until reduced about 30 minutes. 2. Boil Water for Egg Noodles making sure to season your water with Salt. Cook noodles just until soft then drain and set aside. 3. When Noodles are cooked Reduce Heat on Beef to low and remove Bay Leaf and any visible sprigs of Thyme left. Then stir in Sour Cream and Egg Noodles and Serve.

Left out the brown sugar, makes a tangier dish.

Husband didn't care for it much and thought the leftovers were horrible. I thought it was pretty good. Cant put my finger on why it wasn't better. I think maybw it would be great in the crock pot.

Kids didn't like it, but both my husband and Ioved it. Plus, I could open the wine, use a cup in the sauce, and chill the rest to drink with dinner while the stroganoff simmered. Keep an eye on the meat / sauce so it doesn't thicken too much while the noodles cook.
