Made this today with mixed results and would like some advice. I used an ale and followed one of the tips below to put the butter in the mix, rather than over the top. The bread is lovely and light, but impossible to cut properly as it just breaks up. Also it is rather sweet. What beer do people recommend and how can I reduce the sweetness? Does the amount of sugar needed depend on the beer used?

It’s a keeper. Replaced sugar with Splenda. Delicious and what a nice smell from baking.

I used up my left over rye flour with left over bread flour and added an extra dash of salt. It tasted wonderful! I love this recipe and how diverse it can be! Thank you!
