Bejing Broccoli

Ingredients

3 cups fresh broccoli florets

1 1/2 cups celery sliced

1 tablespoon peanut oil

1/4 cup green onion chopped

2 tablespoons pimiento chopped

1 1/4 cups chicken gravy

1 tablespoon soy sauce

salt & pepper to taste

cashews chopped


Directions

In a medium saucepan, cook the broccoli with the celery in water until they are tender crisp. Remove the saucepan from the heat. In a small saucepan, heat the oil over medium heat. Saute the green onion & pimiento until just heated through. Add the broccoli, celery, gravy & soy sauce. Bring to a slow boil & remove from the heat. Add some salt & pepper to taste. Spoon into a serving bowl. Sprinkle with cashews & serve.
