BellaVitano Merlot and arugula-stuffed chicken breasts

Ingredients

2 tbsp Olive oil

10 Oz Fresh arugula

3 Cloves Garlic Minced

4 Chicken breasts boneless and skinless Pounded to 1/2 inch thick

3/4 Cup BellaVitano Merlot Shredded


Directions

1. Preheat oven to 400 degrees F, in a large skillet heat oil over medium-high heat. Add arugula and garlic; sauté just until wilted. Remove skillet from heat. 2. Place chicken breasts on a work surface. Evenly place arugula and garlic mixture in center of each chicken breast. Sprinkle evenly with BellaVitano Merlot cheese 3. Roll up chicken to enclose ingredients, and secure with wooden toothpicks. Season chicken with salt and pepper to taste. Place on nonstick baking sheet 4. Bake, uncovered, 20-25 minutes or until an instant-read thermometer registers 165 degrees F. Serve warm.
