Berry Cream Muffins

Ingredients

2 cups all-purpose flour

1 cup sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cup fresh or frozen raspberries or blue berries

2 Eggs lightly beaten

8 oz. sour cream

1/2 cup vegetable oil

1/2 teaspoon vanilla extract


Directions

Preheat oven to 400 degrees. In a large bowl, combine ingredients through salt. Add berries and toss gently. Combine the remaining ingredients; mix well. Stir into the dry ingredients just until moistened. Fill greased muffin cups 2/3 full. Bake 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
