Better For You Muffins

Ingredients

1.5 cup pumpkin canned

1/2 cup oil

2 Eggs

1 teaspoon Vanilla extract

1/2 cup Brown sugar

1 teaspoon Baking powder

1.5 cup All purpose flour

2.5 teaspoon pumpkin pie spice

1/2 teaspoon Baking soda


Directions

Heat oven to 350 and grease botton of muffin cups. Combine wet ingredients and brown sugar. In seperate bowl combine dry ingredients. Add flour mix to pumpkin mixture, stirring until just combined. Pour batter into muffin cups and bake about 25 minutes.
