Big Apple Pancake

This delicious twist on a pancake will satisfy your craving and fill you up for a much longer time.

Ingredients

2 tablespoons Unsalted butter

1 large sweet apple peeled, cored, and cut into 1/4 inch wide wedges

1/2 cup Skim milk

1/2 cup All-purpose flour

4 large Eggs

3 tablespoons Granulated sugar

1/2 teaspoon Vanilla

1/4 teaspoon Salt

Confectioners sugar for dusting


Directions

Preheat oven to 450 degrees. Melt butter in a 10" oven-proof skillet over moderate heat. Add apple wedges to skillet and cook, turning over once until beginning to soften, about 3 to 5 minutes. While apple is cooking, place milk, flour, eggs, sugar, vanilla and salt in blender or food processor and blend until smooth. Pour batter over apple and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Dust with confectioners sugar and serve immediately.

Great and easy

Very good! I usually make it half-sized and I've used both apples and nectarines, adding some cinnamon while sautéing them in both cases. Not too sweet and very eggy, more like a giant flavored popover than anything else.

The great thing about this recipe is you haven't trashed the whole kitchen to make it. Cleanup is easy. I used whole whet flower, brown sugar and dusted with parmesan cheese.

Very tasty, slightly sweet batter. I added a little cinnamon and nutmeg and it really brought this pancake to life! I'd suggest putting this on a lower rack as the pancake crept up the sides of the dish and burned at the tops. Easy fed a family of four with sides of bacon and eggs.
