Black Bean and Corn Salsa

Ingredients

1 can black beans rinsed

2 cans shoe peg corn

2 cloves garlic (up to 3), pressed

1 jalapeno diced

1/2 red onion diced

2 whole green onions

1 splash olive oil to coat

1 splash white vinegar

2 whole limes juiced

1 lime zest if desired

salt and pepper

1 tablespoon cumin

1 tablespoon chili powder

1 pinch ancho and/or chipotle chili powder

cilantro


Directions

Rinse black beans in a colander. Then drain corn and put all of the ingredients into a bowl. Salt, pepper and spice to your taste. Let sit over night so that all of the flavors can sit. Use tortilla chips and serve!
