Black Bean & Corn Salad

Ingredients

1/3 cup

1/2 cup

1 clove Minced

1 Tsp

1-2 dash

1/2 Tsp

1/2 Tsp

1-2 Tsp Optional

30 ounces Rinsed & drained

1 1/2 cups

1 Peeled, pitted & diced

1 Chopped

2 Chopped

6 Sliced thinly

1/2 cup Chopped


Directions

Place lime juice, oil, garlic, salt, hot sauce, chili powder, cumin & sugar (opt.) in small jar tightly fitting lid. Cover and shake until we'll mixed. In salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, scallions & cilantro. Shake dressing & pour over salad. Stir salad to coat vegetables. May serve immediately or chill.
