Ingredients

500 g (1 pound) raw peeled large shrimp (King Prawns) tails removed

2 cloves garlic minced

1 teaspoon ground basil

1 teaspoon dried thyme

1 teaspoon sea salt

1 teaspoon fresh cracked black pepper

2 teaspoons cayenne pepper

2 teaspoons sweet paprika (or smokey for a different flavour)

2 bunches asparagus halved

1 teaspoon olive oil

4 cups Cos lettuce leaves (or lettuce of choice) washed and ready to use

1 avocado cubed

1/4 red onion sliced

1 handful fresh basil leaves

1/3 cup greek yogurt

1 teaspoon lemon pepper

1 teaspoon lemon juice (optional for extra flavour)

2 tablespoons water (or olive oil)

Salt to taste

Easy to make. Okay flavors.

Overall, nice flavors. I'd make this again but increase the shrimp and/or decrease the blackening spices. I'd also add some shredded parmesan and maybe some pickled peppers, carrots, or other veggies.

Damn! This recipe was incredible! We cut back on the cayenne pepper to just a pinch b/c we're not huge on heat, but other than that, no changes! (Oh wait, we also sautéed the red onion & drizzled with reduction of balsamic for an added sweetness to the dish. Everyone was a huge fan!)

I didnt even make it to my seat before finishing my bowl and going back for seconds. To give the dressing an extra flavor boost skip adding the water or olive oil. Instead, use the water/season mix left in the bottom of the pan after cooking the shrimp and asparagus.
