Blueberry Compote

Ingredients

1/2 c Water

1/2 c Sugar

2 1/2 ts Fresh Lemon Juice

4 c Blueberries or other berries as available


Directions

Stir water, sugar and juice in saucepan over low heat until sugar dissolves. Add berries; bring to boil. Reduce heat; simmer until mixture thickens slightly, about 2 minutes. Cool slightly. Makes about 4 cups.

I love the fresh flavor of the berries and relatively low sugar. I intended to can this in pint jars - the 4 cup yield turned out to be 3 1/2 cups, so I got one pint and a partial jar for the refrigerator. Next time I'll double the recipe and use 1/2 pint jars to get about 6 1/2 pint jars.

Fantastic recipe. I changed it a little and added half strawberries and half blueberries. Tastes great served over lemon pound cake!

I made this to go over baked french toast and everyone really liked it. It was very easy to make and I will definitely make this again.
