Blueberry Muffins

Ingredients

6 tbsp butter

3/4 cup sugar

2 Eggs

2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

2 tsp vanilla

2 cups blueberries fresh or frozen

4 tbsp butter

4 tbsp flour

10 tbsp sugar


Directions

1. Preheat oven to 375. Grease or line 12 muffin cups. 2. In a medium bowl, combine the streusel ingredients (4 tbsp butter, 4 tbsp flour, and 10 tbsp sugar). Mix and set aside. 3. In a large mixing bowl, cream together the 6 tbsp butter and 3/4 cup sugar until they're light and fluffy. Add the eggs and beat well. In a separate bowl combine the dry ingredients (2 cups flour, baking powder, and salt). Add the dry ingredients to the creamed mixture, and beat well. Stir in the milk and vanilla, mixing only until smooth. Quickly stir in the berries. 4. Fill the muffin cups 3/4 to almost full, using all the batter. Sprinkle with the streusel topping. Bake for 30 minutes, until they're light golden brown. Allow to cool.
