Brazilian Cheese Balls

Ingredients

1 cup 2% Milk

1/2 cup Unsalted Butter cut-up

1 teaspoon Kosher Salt

1-1/2 cups Tapioca Flour

1 cup Parmesan Cheese grated

1 tablespoon Fresh Parsley chopped

2 large Eggs


Directions

1) Preheat oven to 400 degrees. Lightly coat a mini muffin pan with cooking spray. Set aside. 2) Combine milk, butter and salt in a saucepan. Heat over medium low heat until butter is melted, stirring occasionally. Remove from heat. Whisk in flour, cheese and parsley. Whisk in eggs, one at a time, until mixture is smooth. 3) Fill each muffin cup with 2 tbl. batter. 4) Bake for 15-20 minutes or until golden brown. Serve immediately.

Quick and easy; however, not as tasty as I would have expected. They are missing something, and I can't put my finger on exactly what it is... Maybe a smear of cream cheese? Maybe dunking them in tomato soup like the other lady suggested? It made 24 little balls, so I still have a few to experiment with.
