Breakfast protein make ahead “muffins”

Ingredients

2 veggie burgers thawed

9 eggs

1/4 t paprika

1/2 t onion powder

1/2 c almond milk

A little cooked sweet potato

Salt and pepper


Directions

Preheat oven 400 degrees. Mix all together except veggie burgers, crumble veggie burgers. Spray muffin tins. Sprinkle veggie burgers in bottom of 12 tins. Evenly pour egg mixture in all tins. Cook 10-15 until set. Store in plastic bag in fridge for quick breakfast on the go!
