5 Tbsp extra virgin olive oil plus a bit extra for greasing the rack (sounds naughty, I like it)

3/4 tsp kosher salt

1/2 tsp freshly ground black pepper

2 sirloin tip steaks (each 1 to 1 1/2 inches thick about 2 1/4 pounds total)

Feta Cream Sauce:

1 cup (about 6 oz) crumbled feta cheese

1/2 cup sour cream

2 Tbsp apple cider vinegar

1/4 cup finely chopped fresh chives
