Brussels Sprouts and Broccoli Frittata

Ingredients

1/2 cup chopped onion

1 cup small fresh broccoli florets

1 cup thinly sliced Brussels sprouts

1/2 cup diced turkey ham (optional)

1 clove minced garlic

2 Eggs

4 egg whites

1/3 cup cooked vermicelli or spaghetti (about 1/2 ounce un

1/2 cup grated fresh Parmesan cheese

1/4 teaspoon crushed red pepper


Directions

Coat a large nonstick skillet with cooking spray; place over med heat until hot. Add onion, saute 3 min. Add broccoli and next 3 ingredients, and saute 2 min. Remove from heat and set aside. Lightly beat eggs and egg whites in a bowl with a whisk; stir in broccoli mixture, pasta, and 2 T cheese. Recoat skillet with cooking spray; place over med heat until hot. Pour egg mixture into skillet. Cover, reduce heat to med-low, and cook 8 min or until almost set. Sprinkle with remaining cheese and pepper. Wrap handle of skillet with foil; broil 3 inches from heat 1 min. Cut into wedges; serve warm.

Yummy! I made a half batch and it barely fit in the bottom of a small pan so next time I am going to make a full batch and use the smaller pan. You can use pot holders and good quality stainless steel pans otherwise
